S'More's Brownies - 4 pts

2 1/2 low-fat honey graham crackers

1 (13.7 ounce) box fat free fudge brownie mix
1 (6 ounce) container plain FF yogurt
1 tsp vanilla extract
16 marshmallows
1/4 cup semisweet chocolate chips.

Preheat over to 350* Line an 8 inch square baking pan with foil, allowing the foil to extend over the rim of the pan. Spray with nonstick spray.

Break the crackers into rectangles and arrange on the bottom of the pan, cutting the crackers to fit. Prepare the brownie mix according to the package directions using the yogurt and vanilla. Pour the batter over graham crackers and spread evenly. Bake until a toothpick inserted 1 inch from the edge comes out with crumbs clinging, about 35 minutes; let cool 15 minutes.

Meanwhile - grill the marshmallows (I'm skipping this step - will just throw them in the oven on top of the brownies - stick it in the oven for a bit - take them out then spread them around) After you spread out the marshmallows - you sprinkle the chocolate chips on top until they soften - about 2 minutes. Transfer to a rack and let cool completely.

Lift the brownies from the pan using the foil as handles. With a large knife, cut the brownies into 12 equal portions, wiping the knife clean and then holding it under cold running water between cuts.

@@@ Edited to add - these were EXCELLENT - way good. I did NOT do my marshmellows over the fire - I just stuck them on top of the brownies when they were almost done. 5 minutes later they were all puffy - and spreadable. Sprinkled my chips and presto - excellent. These WERE easier to cut the second day - and the marshmellows were still kinda gooey - so this can be made ahead of time. ALSO - make them in a 9" square pan and make more than 12 - easily 15 - these taste so rich !!
