Amazing the difference some planning makes -

Scale today has me down - and it's only Wednesday - wahooo. BIL stopped by last night with pizzas - I promptly froze each and every slice - I'll feed them to the workers that come do leaves - or send them to work with dh !!! Got my hair done today - I feel so much better. Need to buy some ink for the printer - then get the kids inside to do school - it's so beautiful outside - going to be hard to convince them to come in !!!

WW Meeting - 3/22

Good Morning Readers - WW meeting today started off with a smile - our old leader called about 15 minutes before the meeting was to start - it was great to talk to her, and be able to pass my phone around so that she could talk to some of the "oldies". She may be stopping by the end of April - hopefully she'll take over a meeting or two !!! I feel back on track - I only had a small loss this week - but promised myself to stay on track - just this one week - to see what I can do. Sooooo - got the journal out - and since the kids have NO swimming this week - there is no excuses. Gotta treadmill at least 3 times, and eat healthy everyday !! Some of the meals I'm having - Tonight - Bison Steaks on the grill - 1 pt per ounce Grilled taters - 3pts per serving SAVORY GRILLED POTATOES IN FOIL Prep 15 Min./Grill 30 Min. 1/2 c. Eggless Chocolate Cake

Eggless Chocolate Cake Light & Tasty This dense moist cake from Peggy Weed of Cheshire, Connecticut is sure to satisfy anyone's chocolate cravings. Drizzles with semi-sweet chocolate, the rich cake is special enough for company...if your family doesn't get to it first! SERVINGS: 14 @ 6 WW points each CATEGORY: Lower Fat METHOD: Baked TIME: Prep: 15 min. Bake: 40 min. + cooling Ingredients: 1 tablespoon plus 1/2 cup baking cocoa, divided 3 cups all-purpose flour 2 cups sugar 2 teaspoons baking soda 1 teaspoon salt 1/4 teaspoon ground cinnamon 2 cups cold brewed coffee 1/3 cup canola oil 2 tablespoons white vinegar 2 teaspoons vanilla extract 1/2 cup semisweet chocolate chips 1/2 teaspoon shortening Directions: Coat a 10-in. fluted tube pan with cooking spray and dust with 1 tablespoon cocoa; set aside. In a large bowl, combine the flour, sugar, baking soda, salt, cinnamon and remaining cocoa. In another bowl, combine the coffee, oil, vinegar and vanilla. Stir into dry ingred

Pineapple Angel Food Cake

1 box FF Angel Food Cake Mix 1 (20 oz) can crushed pineapple, in juice, undrained Preheat oven to 350*, mix the cake mix and pineapple together by hand. Pour into a 13 x 9 inch glass baking dish - lightly sprayed with Pam. Bake for 30 minutes. Turn off the oven and leave inside for a few minutes so it doesn't fall. DO NOT turn the cake upside down !!! Let the cake cool completely. Serves 12 people at 3 WW pts each

Turkey Meatballs

1 lb Ground Turkey Breast 1/2 Cup Seasoned Dried Breadcrumbs 1/3 cup chopped parsley 1 egg 2 TBS grated onion 1 garlic clove, minced 1/2 tsp salt 1/8 tsp pepper 1 cup spaghetti sauce Preaheat oven to 350*. Mix all ingredients except spaghetti sauce, and roll into 20 meatballs. Place a meatball into each well of a mini muffin tin sprayed with cooking spray. Fill un-used wells with water. Bake until lightly browned, about 15-20 minutes. Transfer to a large bowl and add sauce and toss. Each meatball is 1 WW point.

CheeseBurger Pie

6 oz. Mornings Star Farms burger crumbles 8 oz extra lean ground beef 1 cup onion, chopped 1/2 tsp salt 1 cup FF cheddar cheese 1/2 cup reduced fat bisquick 1 cup FF milk 1/2 cup egg substitute preheat oven to 400*. Grease a 9" pie plate with nonstick spray. Cook beef and onion until brown. Drain beef and add crumbles. Stir in salt. Spread in pie plate. Sprinkle cheese on top. Mix in remaining ingredients and pour into pie plate. Bake 20-25 minutes until knife inserted in center comes out clean. Serves 6 at 5 ww points each

Cola Chicken

20 oz skinless, boneless chicken breasts 1 cup ketchup 1 (12 oz) can of diet cola Put chicken in non-stick skillet and pour ketchup and cola over the chicken. Turn heat to medium high and cook chicken for 45 minutes - stirring occasionally. Cover, reduce heat to simmer and cook another 15-20 minutes until sauce thickens and sticks to chicken. makes 5 servings at 4 ww pts each

WW Meeting Minutes - Forks in the Road -

Today they gave us forks when we weighed in. Interesting. How do you manage detours when you drive? Depending on the area and how well I know it - I'll either follow the detour - or make my own detour if I know the way. Perhaps that is why I haven't been so successful at WW - perhaps in making my own detour, I got so far off track (the road) that I'm actually further from my destination - if I would have only followed the correct detour in the first place - I'd be there (goal) by now. So I saved my fork. My new anchor. My back row buds and I have challeneged eachother - my goal - to be under 200 lbs by June 28th. That gives me 15 weeks to loose 16.4 lbs. I can do that. We're thinking of rewards if we all meet our goal. We may travel and see our old WW leader for a few days. What a hoot that would be to drop in on one of her meetings (she's in a different state down south - not exactly somewhere we could drive in a couple of hours). So I'll be sh

This is my "birdhouse quilt" - I finished the binding last night - will take a good picture once I figure out how to hang it above the steps - gotta find a very high ladder ! And it sure is morning - 5:18 to be exact. 3:30 found me staring at the alarm clock - so I finally turned it off and got up. Made dh's lunch for the day, and got the coffee pot ready to brew. Will go back to my WW meeting today. I will have a gain, no doubt about that - but not as bad as I thought. Made a promise to myself - stay on track just one week. Just to see. Then I'll shoot for 2 weeks. Then for a month. Then for a season. I'm going to get to goal this year, I am. I know how, I know what I need to do, so I'm going to do it. No meal plans yet for the weekend. Will stop and see whats on sale after my meeting. Made tilapia for dh and the kids last night - one of the healthiest meals - and everyone loves it - so I'm going to start making it 2 times a week. We've b

Spring Forward - Don't Forget

Don't forget to spring those clocks forward when you go to bed Saturday night. I'll be missing my WW meeting again this week - swim practice is at 8 a.m. - don't know why the coaches need such an early start - but since it's the end of the season - we'll be there ! I'll definately be at WW next week - need to stay on track. Been doing pretty well food wise - just need to stay away from the snacking. The new breadmaker is awesome - I've been making 2 loaves per day - freezing one - it makes for excellent toast - plus I've been using bran and oats and flax seed meal - so the bread is healthy. The loaf that is cooking now is mango and nut .... a new invention .... we'll see. Found this great recipe online - tweeked it a bit to fit my use - and will make it for dinner tomorrow night. Only 4 pts per slice - and it's 1/8th of the pie - not 1/12th like a normal serving. I'll let you know how it turns out. Pumpkin Cream Pie 2 cups skim milk 2
