Stuff

As you see - it's been a fine week Gotta love it. hitting the gym nearly every day and watching and journaling - it's working. I did pick up this book I can't say how inspiring it is. It's almost like it was written to me. Here's a lady with 4 kids of her own, a business, and ended up over 300 lbs. It's funny and sad at the same time. I don't think I've ever lived through some of the humilating stuff she went through - but she perservered. It doesn't lie - tells exactly how it is - she even confesses to eating an entire cake - in her car. I can't recommend it enough if you've been yo-yo'ing for years like I have. Some stuff - Hungry girl came out with a Baskin Robbins deal - next Thursday - take your gym membership to any Baskin Robbins and get a free scoop of their new healthy ice creams. I've been couponing like crazy since 2009 started, and have managed to save over 50% of my grocery bills so far - and with a family of 6,

Wonderful first week

One week into the New Year - and the scale is steadily moving down. Better eating habits, much better journaling, and exercising everyday have proved to be the key. I've hit the gym nearly every single day - and the scale shows it ! I've also been spending a bit of time sewing (to keep my hands busy) getting the paperwork in order for taxes, couponing and making grocery lists (amazing how much you can save if you really plan) and of course, going back to college myself. Will work on my menu's later this week. I have a butternut squash I'm making fries out of for lunch. Will post how they turned out later.

Shredded Potato Casserole

Shredded Potato Casserole This potato dish is perfect with prime rib and many other entrees. Make it ahead and have it ready to pop into the oven for the party. The topping of cornflake crumbs and Parmesan cheese adds crunch. SERVINGS: 6-8 CATEGORY: Side Dish METHOD: Baked TIME: Prep: 10 min. Bake: 45 min. Ingredients: 1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted 1 cup (8 ounces) sour cream 1/2 cup milk 1 cup (4 ounces) shredded cheddar cheese 1/2 cup butter, melted, divided 1 package (30 ounces) frozen shredded hash brown potatoes, thawed 1 cup cornflake crumbs 1/4 cup grated Parmesan cheese Directions: In a large bowl, combine the soup, sour cream, milk, cheddar cheese and 1/4 cup butter. Stir in the hash browns. Transfer to a greased 13-in. x 9-in. baking dish. In a small bowl, combine the cornflake crumbs, Parmesan cheese and remaining butter; sprinkle over top. Bake, uncovered, at 325° for 45-50 minutes or until heated through. Yield: 6-8 servings.

What a great day ! Cold - in the 20's this morning - but was at the gym at 6 a.m. Did my 60 minutes on the treadmill, 30 minutes of weights, and I feel good. Going to work on my UFO's (unfinished objects - quilt related!) DH cooking dinner.
