Feb. 28th

Another month has gone by, and my weight has basically remained the same. I know exactly what I'm doing wrong - I'm not following the program the way I used to -I'm not concentrating on getting in my 5 f/v, nor my 2 tsp of healthy oils. If it weren't for ice cream -dairy would be a problem as well. March is going to be my month to get back on track. If I simply loose 1 lb a week - I can still make goal this year. 43 more weeks left - I CAN DO THIS!!

WW meeting - down .2 - good enough since I was carrying some extra weight anyway - menu's been changed a bit - we did the italian turkey cutlets last night -excellent. Tonight - chinese buffet - I will NOT be asking for chopsticks Sunday - company coming - lamb in oven, green bean casserole, mashed taters and rice Monday - spinach lasagna Tuesday - chicken Wednesday - pizza Thursday - Italian turkey (again) Friday - leftovers have a good week !!

Parm/Garlic Turkey

1/2 cup grated parmesan cheese 1 envelope good Seasons Italian salad dressing mix 1/2 teaspoon garlic powder 6 Turkey Cutlets 1. Preheat oven to 400*, mix cheese, slada dressing mix and garlic powder 2. moisten turkey with water, coat with cheese mixture, place in shallow baking dish bake 20-25 min until cooked through This is 2.6 pts per one, so if you have two - it's only 5 pts !!

White Bean and Ground Turkey Slow Cooker Chipotle Chili

8 servings/5 points 1 sprays cooking spray 2 pound uncooked ground turkey breast 1 large onion(s), chopped 2 medium garlic clove(s), chopped 32 oz fat-free chicken broth 1 tsp ground cumin 1 tsp dried oregano 1 tsp chili powder, chipotle variety 30 oz canned white beans, drained and rinsed 3 Tbsp fresh lime juice 1/4 cup cilantro, fresh, coarsely chopped (plus extra for garnish) Instructions Coat a large skillet with cooking spray. Cook turkey, onion and garlic over medium-high heat, stirring occasionally, until turkey is browned, about 10 minutes; drain off any fat. Add turkey mixture and remaining ingredients to a 3 1/2 quart or larger slow cooker. Cover and cook on low heat setting for at least 4 hours. Yields about 1 cup per serving. (Note: For additional color, top with extra freshly chopped cilantro just before serving.)

Chicken and Spinach Lasagna

Chicken and Spinach Lasagna POINTS® Value: 7Servings: 8 1 sprays cooking spray 52 oz Contadina Marinara Sauce, or other low-fat marinara sauce 1 Tbsp olive oil 1 medium onion(s), chopped 1 pound uncooked ground chicken breast 30 oz fat-free ricotta cheese 2 large egg white(s), lightly beaten 1 tsp garlic powder 1 Tbsp Italian seasoning 9 items dry lasagna noodles 20 oz chopped frozen spinach, thawed and squeezed dry 1 1/2 cup Kraft Low-Moisture, Part-Skim Finely Shredded Mozzarella Cheese, or similar product, divided Instructions Preheat oven to 350ºF. Coat a large, deep lasagna pan with cooking spray. Measure 2 cups of marinara sauce; set aside. Heat oil in a large skillet over medium-high heat. Add onion; cook and stir until almost tender, about 3 to 4 minutes. Add chicken; cook until no longer pink, stirring frequently, about 4 to 5 minutes. Add remaining marinara sauce to skillet and stir until well combined; set aside.

White Fish with Baked Potato

INGREDIENTS: 4 sheets aluminum foil wrap, each at least 18 inches long 4 baking potatoes 2 tablespoons chives 2 tablespoons basil 4 firm-fleshed white fish fillets 4 tablespoons butter, divided 1/2 cup white wine (or use white grape juice with a splash of vinegar) Salt and pepper to taste COOKING INSTRUCTIONS: Preheat oven to 375 degrees. Place baking potatoes in oven. Combine chives and basil in a small bowl. Place one fish fillet in the middle of each piece of aluminum foil; make a “bowl” to surround the fish by pulling up the edges on all four sides. Top each fillet with one tablespoon of butter, one tablespoon of the chives/basil mixture, and two tablespoons of wine; pepper to taste. Fold the foil up around the fish and seal the edges very tightly so that nothing will leak out during the cooking process. Place the packets in a baking dish and bake for 30 minutes. To serve, place a foil packet on each dinner plate and allow each person to open it so that none of the wine sauce leaks

Chicken Marsala

Chicken Marsala Points 4 Servings 4 2 tsp olive oil 1 cup mushroom(s), fresh, sliced 1 pound uncooked boneless, skinless chicken breast, four 4 oz pieces 1 tsp dried thyme 1/2 tsp table salt 1/4 tsp black pepper 1/2 cup wine, Marsala variety 1 1/4 cup canned beef broth, reduced-sodium, divided 1 1/2 Tbsp cornstarch Instructions Heat oil in a large skillet over medium-high heat. Add mushrooms and sauté until tender and releasing liquid, about 5 minutes. Meanwhile, place chicken on a plate and season both sides with thyme, salt and pepper. Wednesday - Feb. 21

Beautiful sunny day outside - windows are open, fresh air is pouring in, come on Spring !!! An update on some of my menu choices so far - Lime Chicken 8 out of 10. Everyone liked it - the sauce was pretty good, but I would have liked to have more sauce - next time I'll double that part. The beef stew in the oven - awesome - very easy - I threw the rice in when I threw the entire thing in the oven (I didn't have a covered casserole big enough, so I just used a regular baking pan covered with tin foil) Put it in for 1 hour 15 minutes - and left. Came home 2 hours later (swim practice) and it was wonderful !! !! Tonight - stuffed shells - we'll see...... Have a good one

Menu Plan Monday

Need to switch some things around from my earlier plan - sales at the grocery store, doncha know. Did end up having pizza yesterday - the kids had Pizza Hut, and dh and I had Wolfgang Pucks frozen pies - darn good. Got them from Sam's. Course, a serving was 1/3 of a pizza, and I ate 1/2 (dh ate 1 and 1/2 - OUCH) I'll figure out the points though, and journal them ! Grilled Beef Fajitas - menu change

Gotta change the menu - only lost 1.4 lbs this week - so no pizza tomorrow either. Since we did chicken last night - can't do the lime chicken again tonight, so beef it is. Tomorrow we're having company again - so after seeing whats on sale, I'll post something different as well. Happy Valentines Day

Hope everyone is having a great (snowy,icy, rainy, windy, cold) kinda day !! We woke up to very hard rain (I wish it had been snow) - but - now it seems to be over. Made the Golden Artichoke Chicken Bake last night (well, dd #1 made it). It was pretty good. I made it with 1/2 chicken breasts (dh and I) and 1/2 chicken thighs (kids). This was one recipe where the breasts actually tasted better in the end - they did not dry out - even though we cooked them early in the evening (done around 4pm) then reheated them for dinner (at 7pm) Dinner tonight - shrimp paella - I love it - and I already know I can leave it without it getting mushy. Saved 6 cupcakes from ds's Valentines Day party - those will be our Valentines Day dessert. Jerzy

BTW - I made Dreamsicle Cake again last night - you would never know it was a WW friendly cake - and wow - is it good. And only 3 pts per serving - easy enough to make, and probably have everything you need at home. I experiment each time I make it - yesterday I used orange jello, but a diet sprite. It's also very good with rasberry or cherry jello, and different flavored pudding mixes. Monday - Turkey Scaloppine 4 servings at 5 pts each Twice Baked Potatoes with Feta Cheese – 4 pts per 1 potato pg 161 Tuesday – Golden Artichoke Chicken Bake over rice (thanks MJ) Serves 4 @ 5 pts per serving Adjust if you use low fat soup, and add points for rice Wednesday – Shrimp Bisque or Paella Chowder Thursday – Meatballs and sauce in crock over egg noodles Friday – leftovers Saturday – Lime Sauced Chicken over rice - 4 servings at 4 pts per serving - add more points for rice

Dreamsicle Cake

I've made this so many times before, using different kinds of diet soda and jello. Tonight will be orange jello, but diet sprite - as thats all we have Dreamsicle Cake -3 points -for cake-1 Duncan Heinz Classic White cake mix 2 egg whites 1 can diet orange soda (Slice, Sunkist, etc.)- for filling- 1 sm. pkg. orange flavor sugar free Jello 1 cup hot water 1 cup cold water -for frosting- 1 sm. pkg. orange flavor sugar free Jello 1 sm. pkg. INSTANT fat free, sugar free vanilla pudding 1 cup 2% milk 1 tsp. vanilla 8 oz. tub Cool Whip Free topping Preheat oven to 350 degrees. Spray shiny 9x13 cake pan with Pam. Mix dry cake mix with orange soda and egg whites. Blend 30 seconds until moistened and then 2 minutes on medium speed. Pour batter into pan and bake 33-35 minutes, or until done in center.Mix 1 pkg. orange jello powder with hot water until dissolved. Add cold water and stir.Poke holes in cake with fork that the tines have been sprayed with Pam. Pour orange mixture evenly over ca

Lime Chicken

Sunday – Lime Sauced Chicken over rice – 4 servings at 4 pts per serving add more points for rice Nonstick cooking spray 4 (about 1 1/4 pounds total) boneless, skinless chicken breast halves 3/4 cup Apple NESTLÉ® JUICY JUICE® All Natural 100% Juice Juice from 1 lime 2 teaspoons cornstarch 1 teaspoon MAGGI Reduced Sodium Chicken Flavor Instant Bouillon SPRAY large, nonstick skillet with nonstick cooking spray. Heat over medium heat. Cook chicken, turning once, for 8 to 10 minutes or until no longer pink in center. Remove from skillet; keep warm.COMBINE Juicy Juice, lime juice, cornstarch and bouillon in small bowl. Add to skillet; cook, stirring occasionally, until thick. Spoon sauce over chicken to serve.

Meatballs and sauce in crock over egg noodles

2 pounds lean ground beef 1 cup bread crumbs 1 teaspoon garlic powder 2 envelopes onion soup mix 2 teaspoons Worcestershire sauce 2 eggs Sauce: 1 cup chopped onion 2 cans tomato paste (12 ounces total) 2 cloves garlic, minced 1/4 cup Worcestershire sauce 3 tablespoons red wine vinegar 1/2 cup brown sugar 1/2 cup sweet pickle relish 1/2 cup beef broth 2 teaspoons salt 2 teaspoons dry mustard Combine meatball ingredients and mix well. Shape into meatballs and brown in a skillet with 1 tablespoon of oil. Drain on paper towels.Add all sauce ingredients to Crock Pot and stir well. Add meatballs and cook, covered, on low for 5 to 6 hours (high for 2 to 3). Makes about 60 meatball If you make this into 60 meatballs – each 6 meatball serving would be about 9.5 pts, and of course, add more for pasta.

Golden Artichoke Chicken Bake

Recipe - Preheat oven to 350 degrees Ingredients: 1 can golden mushroom soup ¾ cup fire-roasted green salsa ¼ teaspoon cumin 4 boneless skinless chicken breast halves 1 (14-oz) can quartered artichoke hearts (drained) ½ cup sliced olives (drained) In a mixing bowl combine soup, salsa and cumin; set aside. Arrange chicken in a 9x9 inch baking dish. Bake at 350 degrees for 20 minutes. Place artichoke hearts around chicken. Pour soup mixture over top and sprinkle with olives. Bake 25 minutes longer or until chicken is no longer pink in center. Serves 4 @ 5 pts per serving Adjust if you use low fat soup, and add points for rice

Turkey Scaloppine 4 servings at 5 pts each

Turkey Scaloppine Recipe ingredients 1 pound turkey breast cutlets or slices 3 tablespoons all-purpose flour 3 teaspoons extra virgin olive oil divided 1/4 cup water 1/4 cup dry white wine or chicken broth 1 tablespoon butter or margarine 2 large cloves garlic finely chopped 2 teaspoons finely chopped fresh sage or 1/2 teaspoon dried sage, crushed 1/2 teaspoon MAGGI Reduced Sodium Chicken Flavor Instant Bouillon COAT cutlets with flour; sprinkle with salt and ground black pepper, if desired.HEAT 1 1/2 teaspoons oil in large, nonstick skillet over medium-high heat. Add half of cutlets; cook on each side for 1 to 2 minutes or until no longer pink in center. Remove from skillet; keep warm. Repeat with remaining oil and cutlets.ADD water, wine, butter, garlic, sage and bouillon to skillet. Bring to a boil; cook for 1 to 2 minutes. Add cutlets to skillet; reduce heat to low. Cook, stirring and turning cutlets over to coat, for 1 to 2 minutes.

Recipe - Horseradish Chicken

Ok, Ok, today was "supposed" to be Cornish Hens - but they weren't on sale, and chickens were $3 each (for a whole frying chicken) so I bought 2 (1 for tomorrow's dinner). One chicken will be rubbed with McCormicks wet rub - the kids LOVE this stuff - and it's so good on chicken parts out on the grill, today we're going to try it on a baked whole chicken. The other chicken is being done for daddy - who LOVES his horseradish. I ran this through Master Cook - works up to be about 4 pts per serving (if you get 6 servings out of a chicken, and if you take the skin off). If you only get 4 servings out of your chicken, the points go up to 5.65 - guess I'll go check the cupboards to see what we'll serve with this. Checked out the scale this a.m. - looking better. Still a few more days until my WW meeting though, so I'm being careful. I've had some people emailing me about a WW point tracker that they can download to their desktop. It also figures out your AP. If you are interested - simply email me and I'll email it back. I tried to download it to an MSN site (scroll down to January) but if you aren't already a member of an MSN group, you have to do all that before you can access it.
