Creamed Chipped Beef Casserole 2) 2.5 ounce packages Hormel Dried Beef - shredded 1/4 Cup finely chopped onion 2 cups skim milk 3 tablespoons all-purpose flour 1 8 ounce package Philadelphia fat-free cream cheese 1/2 cup (one 2.5 oz jar) sliced mushrooms - drained 3/4 cup (3 ounces) shredded Kraft reduced fat cheddar cheese 2 teaspoons dried parsley flakes 2 cups hot cooked noodles - rinsed and drained 1/2 cup frozen peas Preheat oven to 350° F. Spray an 8-by-8 inch baking dish with butter-flavored spray. In a large skillet sprayed with butter-flavored spray, saute dried beef and onion for 5 minutes. In a covered jar, combine skim milk and flour. Shake well to blend. Add milk mixture to beef mixture. Mix well to combine. Stir in cream cheese. Continue cooking for 5 minutes or until mixture starts to thicken. Stir in mushrooms, cheddar cheese, and parsley flakes. Add noodles and peas. Mix well to combine. Chicken Paprikash 2 teaspoons corn oil 3 pounds chicken, skinned, cut into 8 pieces 1 cup sliced onions 2 tablespoons paprika 2 cloves garlic - minced 1/2 teaspoon dried thyme leaves 1/2 teaspoon salt 1/4 teaspoon black pepper 1/2 cup low-sodium chicken broth 1/4 cup dry white wine -- 2 fluid ounces 2 tablespoons white wine vinegar 1 tablespoon tomato puree 2 teaspoons all-purpose flour 1/2 cup nonfat sour cream In large skillet, heat oil; add chicken. Cook over medium-high heat 2 minutes on each side, until golden brown. Remove chicken from skillet; set aside. To same skillet, add onions; cook, stirring frequently, 4-5 minutes, until onions are lightly browned. Reduce heat to low; add paprika and garlic. Cook, stirring constantly, 3 minutes. Stir in thyme, salt and pepper. In small bowl, with wire whisk, combine broth, wine, vinegar, tomato puree and flour, blending until flour is dissolved; strain and add to onion mixture. Crockpot Burger Casserole *** Update 4/26 - I thought this was just ok. 2 dd's ate it. dh didn't like it - nor did ds (he hates peas) Will NOT be making this one again. 16 oz. extra lean ground beef (or turkey) 2 cups sliced raw potatoes 1 1/2 cups sliced carrots 1 cup chopped celery 1/2 cup chopped onion 1 cup frozen peas -thawed 1 cup frozen whole kernel corn - thawed 1 10 oz. can healthy Request Tomato Soup 1/2 cup water 1 tsp. dried parsley flakes 1 can mushrooms Salt and Pepper In large skillet brown meat, onion and celery mixture and mushrooms. In slow cooker container - sprayed with butter flavored spray combine meat mixture, potatoes, carrots, peas, and corn. stir in tomato soup, water, parsley flakes and salt and pepper to taste. Cover and cook on low 6 to 8 hours.6 - 1 cup servings 243 calories - 7 gm fat - 17 gm. protein - 28 gm. carbohydrates - 333 mg. Sodium (more if you add extra salt ) 33 mg. calcium - 4 gm. Chicken Parm – WW – 5, serves 4 from WW 1 pound uncooked boneless, skinless chicken breast, thinly pounded (four 4-oz pieces) 2 large egg white(s), lightly beaten 1/2 cup dried bread crumbs 1 Tbsp Italian seasoning 1 tsp olive oil 1 1/2 cup canned tomato sauce 1/2 cup part-skim mozzarella cheese, shredded 1 Tbsp grated Parmesan cheese Preheat oven to 350ºF. Coat an 8-inch square pan with cooking spray. Dip chicken in egg whites, and turn to coat. Then mix bread crumbs with Italian seasoning and dip chicken in bread-crumb mixture; turn to coat thoroughly. Heat oil in a large skillet; add chicken. Cook until lightly browned and no longer pink in center, about 4 minutes per side; place on paper towels to drain.Pour 1/2 cup of sauce into prepared baking dish; place chicken in dish and pour remaining sauce evenly over chicken. Sprinkle with cheeses and bake until bubbly, about 25 minutes.

Penne Shrimp Alfredo 6 pts 6 servings 6 oz. penne pasta 1/2 cup finely diced onion 1 Tbs. minced fresh garlic(or to taste) 2 Tbs. all pourpose flour 2 cup 1% milk 3/4 cup grated parmesian cheese 1 lb. peeled shrimp 1 tsp. oregano salt and pepper to taste Cook pasta according to package directions. Rinse and set asideSaute onion and garlic in smart balance spread until golden brown.Sprinkle flour over onions and garlic and stir till flour is combined and lump free.Add milk all at once and wisk into flour vegetable mixture until smooth.Continue to cook, stiring frequently, over medium heat until mixture starts to bubble and thicken.Add shrimp, parmesian, and spices. Stir and simmer another 3 to 5 minutes until shrimp are cooked through and cheese is melted.Add cooked pasta and stir till combined.

Tuesday, April 17th

Tax day - ours are paid, and the payment to the accountant sent out as well - whew - glad thats done for yet another year. On the medical front - dd#2 got her cast off today. I was kinda hoping he'd offer to take out my stitches today and put me in a fiberglass cast - but it hasn't been long enough. Hopefully by Friday - I miss working out my menu's. Cooking has been tougher than I thought - but even dh has pitched in with dishes and carrying heavier items. Life is good. Didn't do Menu Plan Monday this week - Just takes too long to type but this is what I'm planning Monday - buffalo burgers - Love my george forman grill when it rains Tuesday - frozen lasagna and chicken Wednesday - Something over rice - just haven't decided what yet - maybe shrimp something? Thursday - Something in the crock - the kids swim - so something that'll be ready when we get home is best. Yes, I DO realize it's only Saturday - but tomorrow we're having company.... Alrighty – scheduled for surgery first thing Monday morning. Let’s pray everything goes as planned ! Speaking of planning – it’s time for Menu Plan Monday again !! Since the kids will be cooking all week – you’ll notice the recipes are a bit more child friendly !! Sunday – I have 2 legs of lamb ready for the oven – they’ve been marinating the that McCormick Wet Rub that I LOVE !! Can’t say enough about that product. It’s also great on boneless, skinless chicken thighs thrown on the grill in the summer. With that I’ll be serving scalloped taters, grilled asparagus and green bean casserole. I’m making flan for the grownups for dessert, and cake for the kids. Monday – Hopefully there will be enough leftover lamb to make pita sandwiches. April 4 - Just thinking out loud here -

Only a few more days before I go under the knife - and for some reason - this time around, it's bothering me. It isn't much that does bother me, I mean, once you have your gallbladder out in Egypt, and they wheel you into the O.R. and everyone is watching arabic soap operas while they get the instruments ready - once you get through that - a little hand surgery shouldn't bother me - right? I don't think it's the surgery - so much as the idea that he won't be able to fix my wrist/hand - and I'll have this pain for the rest of my life. I quilt. Thats what I do. I don't know how well I do it - but I enjoy it - and I really don't want to give it up. Hmmmmmmm OH well - second day of the organizational challenge - today I'm working hard on my desk/paperwork. If I can get the bills ready for the mail for next week - I'll be more than happy. I won't be able to sign checks or write for awhile - so I'll have to be majorly organized to get these

ORGANIZE?

I was sooooo ready to participate in the organizational challenge being held here - BUT - a visit to my Ortho (let's see, thats the 6th visit in under 2 months) told me that I no longer needed an MRI - since I had re-injured the same wrist and I wasn't really doing anything - he scheduled me for surgery. Seems as if after the surgery I'll be in a long arm splint for a couple weeks, then a long arm cast again for another 4-6 weeks. SOOOOO - I'm not sure how much organizing I'll get done - but since I took the pictures of my office - I figured I'll give it a shot anyway. This is my office - I run 3 businesses from here. I also take care of all our personal financials - so it's kinda overwhelming at times. This is picture #1 - this pile of boxes in the corner are all filled with stuff that needs to go to our home in Egypt. I have a coffee maker, enough vitamins for a year, 2 sets of pots and pans, a set of sheets - the bag on top is filled with Crystal Li

Weight Watcher Lasagna

WEIGHT WATCHER LASAGNA 1 lb. ground turkey 1 lg. onion 1 (14 1/2 oz.) can stewed tomatoes 1 (6 oz.) can tomato paste 1 c. water 1 tbsp. sugar 2 tbsp. parsley flakes 1 tsp. basil 2 2/3 c. cottage cheese 4 oz. Parmesan cheese 1 tbsp. parsley flakes 1 tsp. oregano 8 oz. uncooked lasagna noodles 8 oz. Mozzarella cheese Brown and drain turkey and onion. Mix the next six ingredients together and add to cooked meat. Mix the next four ingredients. In a 9 x 13 inch pan, that has been sprayed, layer: 1/2 sauce - meat mixture, 1/2 noodles, all of cottage cheese, 1/2 noodles, remaining sauce. Top with Mozzarella cheese and bake at 350 degrees for 1 hour covered; 15 minutes uncovered. Let set a few minutes before cutting. 8 servings.

Late this week - had a busy weekend - but no swimming now for an entire week !!! Joy, Joy !! I do have to visit the Ortho again tomorrow morning - seems like I re-damaged my wrist over the weekend - urgh. Anyway - it's Monday so - make sure to click on the icon and check out all the other wonderful blogs that participate in Menu Plan Mondays. I don't have all the WW points figured out for everything - but I will do it as I make them. As a side note - made a WONDERFUL shrimp bisque last night - and even made the bread bowls to serve it in. Talk about a wonderful dinner - I'll be doing that again when we have company !!
