Penne Shrimp Alfredo 6 pts 6 servings
6 oz. penne pasta
1/2 cup finely diced onion
1 Tbs. minced fresh garlic(or to taste)
2 Tbs. all pourpose flour
2 cup 1% milk
3/4 cup grated parmesian cheese
1 lb. peeled shrimp
1 tsp. oregano
salt and pepper to taste
Cook pasta according to package directions. Rinse and set asideSaute onion and garlic in smart balance spread until golden brown.Sprinkle flour over onions and garlic and stir till flour is combined and lump free.Add milk all at once and wisk into flour vegetable mixture until smooth.Continue to cook, stiring frequently, over medium heat until mixture starts to bubble and thicken.Add shrimp, parmesian, and spices. Stir and simmer another 3 to 5 minutes until shrimp are cooked through and cheese is melted.Add cooked pasta and stir till combined.
