Holiday Pasta
Since we don't celebrate Christmas - the kids sometimes feel left out. I try and make it a special day anyway - no school, movies with Popcorn (they don't know it - but I was able to get the G-force movie from Redbox) - and a special dinner and dessert. Not sure yet what I'll make for dessert - probably brownies - it's their favorite - but I will be making Holiday Pasta. This recipe can easily serve 12. Usually I'll make only 1 lb of pasta - and freeze the leftover sauce - making for a quick meal during a swim night. This is not exactly WW friendly - 17 pts per serving - but if you use all lean meats - and higher fiber pasta - it'll cut down a point or two. It is filling though - and you could easily eat this for a late lunch and nothing else for the night !

2 pounds rigatoni
2 tablespoons extra virgin olive oil
1 pound hot turkey Italian sausage link
1 pound sweet Italian turkey sausage link
1 pound lean ground beef
1 pound ground lamb
1/2 teaspoon allspice
1 pinch black pepper
2 each carrot
2 each yellow onion
8 each garlic
1 cup dry red wine
2 cups beef stock
56 ounces crushed tomatoes
1/2 cup cilantro
1 cup grated romano cheese
Cook pasta al dente in salted water
Cook the sausages, breaking them up into pieces. Remove from pan, then cook the beef and lamb. Season with allspice, salt and pepper.
Add carrots, onions, and garlic - cook until soft - 6 min. Add sausage back to pan, drain the fat.
Deglaze pan with wine. Stir in stock and tomatoes. Simmer for at least 20 minutes - longer is better
