Back on Track - this week I'm cooking -

Sunday - Whole Tilapia on the grill - sooo easy. Shoprite had Whole Tilapia on sale last week - I ended up getting 2 cases. Easiest way to fix - stuff the inside with some fresh cilantro and dill and some cloves of garlic (slightly smooshed). Lightly olive oil the outside and season with salt and pepper. Wrap each fish individually in Renolds Wrap Heavy Duty so that nothing can escape. Throw on a HOT grill - about 10 minutes per side. I get my grill really, really hot, then turn it down half way after I throw the packages on. If you are a garlic lover - this is an excellent time to roast some garlic - take a whole head of garlic, slice off the top, drizzle a bit of olive oil on top and wrap it up in Renolds Wrap. Just throw it on the grill at the same time. I usually put mine on that little shelf above the main grill so that it doesn't get crispy. No need to peel it first - when you serve it - you can squeeze out the garlic from each little piece - great spread on some fresh bread !!!

Monday - Flank Steak with Almond Pesto - 5 WW points / 4 servings

INGREDIENTS:
3/4 cup chopped fresh cilantro
2 tablespoons slivered and toasted almonds (spread on baking sheet and toast in oven)
1 tablespoon chopped jalapeno pepper (depending on heat tolerance)
Salt and pepper, to taste
1 clove pressed garlic
3 tablespoons low fat plain yogurt
1 1/2 teaspoons fresh lime juice
1 pound flank steak, trimmed of fat
Cilantro sprigs (optional)
COOKING INSTRUCTIONS:
Preheat outdoor or indoor grill or oven broiler.
To make pesto: Combine first 6 ingredients in a food processor or blender; process until finely chopped; add yogurt and lime juice; process until smooth.
Grill/broil steak until cooked to your desired level of doneness; allow it to rest on your cutting board for about 10 minutes to redistribute the juices, then cut diagonally (across the grain) into 1/4-inch slices. Serve steak with pesto sauce on the side. Garnish with cilantro sprigs, if desired.

Probably make either mashed taters, or baked taters with this. Maybe scalloped taters - haven't had that for awhile. Found Cheesey Potato Gratin in WW Turnaround page 245, 5 points

French Fries - Ore-Ida Steak Fries - 7 fries are only 2 pts, or 1 1/4 cup of zesty twirls at 3 pts

Thursday - Easy Veggie Lasagna from WW Pure Comfort pg 105 7 WW points
Rustic Dinner Rolls - WW Turnaround pg 272 2 pts
Green Salad

Friday - Leftovers or fish - depends on whats in the fridge

Saturday - Baked Spinach and Cheese Dumplings - WW Turnaround, page 229 3 pts
Chicken on the grill - using the McCormick Wet Rub - need to buy another case of that as well. Boneless/Skinless chicken thighs are great at only 3 pts each.
