Crunchy Chicken Bake

Crunchy Chicken Bake – Serves 4 @ 5 pts each

2/3 cup cornflake crumbs
1 TBS all-purpose flour
2 tsp paprika
1 tsp packed brown sugar
¾ tsp garlic powder
¾ tsp onion powder
¾ tsp salt
½ tsp ground coriander
4 (1/2 lb) skinless boneless bone-in chicken-breast halves.

Preheat oven to 400*. Spray a baking sheet with nonstick spray.

Combine the cornflake crumbs, flour, paprika, brown sugar, garlic powder, onion powder, salt, and coriander in a large zip-loc bag. Spray the chicken lightly with nonstick spray and place 1 piece of chicken in the bag. Shake the bag to coat the chicken evenly; then transfer the chicken to the baking sheet. Repeat with the remaining pieces of chicken, and discard any of the remaining crumb mixture.

Bake until the chicken is golden and cooked through, 40-45 minutes
