I can't begin to say how proud I am of my daughter. She is #2 out of 4, so as one of the "middles" she could have easily been overlooked, but she's made a name for herself. She's an amazing swimmer, more dedicated than most, has given up a lot of typical teenage stuff - like movies and sleepovers with friends, because she always had swim practice. </div>

It paid off, and yesterday was her official signing day for Rider University. Rider was a very smart choice on her part. It is pretty close to where we live now, less than a 2 hour drive. It is small, and she wanted a small university, but it is also Division I, meaning she can continue to train, and they were able to give her money towards her college years. If she decides after a year or two of college that she wasn't meant for college, then she won't be left deeply in debt, but she is also able to get a great education at Rider, so she's happy with her choice.</div>

Here she is with her best friend Lauren, and another good friend, Cristian. These 3 have been together on the same club team since Cristian and Lauren joined Leenah at the EHT Seahawks when they were all about 6-7. Leenah started with the Seahawks when she was 5, but they quickly formed a good friendship that lasted right up through graduation. I'm sure they will all stay in contact and although each is going a different way - all three are swimming Division I. Each has made that commitment to the sport they love, and they have taught me a lot about going after something that I want. Congrats you 3 ... You made it !!</div>

This is him last weekend bagging groceries for a weekend fundraiser. He loves crew. I love him. I want to be around for a long time to bug him :) Anyway, now that High School crew is over, he and one of his boat mates decided they were going to join the gym and work out. I already belonged to the gym (but never went) So his coach is also a trainer, and was willing to work with the boys, so the other parent and I spent the hour chatting while on the treadmill, and just like that, I fell in love with the gym again. So after a couple of days watching the boys work out with their trainer, and me on a treadmill, I texted him and asked if he was willing to work with an out of shape, overweight parent, and here's the kicker, my free time is at 5 a.m. Not only way he willing, he was there BEFORE me yesterday (truth be told, I was 2 minutes late, highly unlike me) It felt WONDERFUL to be pushing weights again. But this morning ?? I'm thinking of getting a straw for my coffee cup so I don't have to pick it up. My legs are fine, but my shoulders and elbows? Yikes, I am OUT of shape. </div>

This week I just signed up for <a href="http://amzn.to/2x0N45X">AMAZON Fresh</a> .... they will be delivering my groceries Monday morning (holiday weekend or I probably could have gotten sooner). I saved $50 off my $150 order by using FRESH50 in the Promo Box. I've heard some great things about the delivery service - so I'll give it a shot. Prices of meat I thought were high, so I may have to hit the grocery store for anything I don't have in the freezer, but I can easily see myself doing a weekly shopping trip on Amazon and then just hitting the butcher, or Shoprite for meats. </div>

Usually I prepare it with scampi, or something equally unhealthy. This time I tried something new, and it was a hit. I will certainly make this over again, it was good enough to serve when we have guests.<br />
<br />
I used 4 pounds of large shrimp, peeled and cleaned. I buy the ones that are frozen and cleaned, but still have the tail on. They are way cheaper than the ones that are totally cleaned, and it took me about 5 minutes to squeeze the tails off all 4 pounds once they were thawed. I served this over plain white rice, it was a hit.<br />
<br />
Take your 4 pounds of cleaned shrimp and marinate in about 1/4 cup of lemon juice, 1/4 cup of flour and 1/4 cup of corn starch. I put mine in the lemon juice first and gave it a good mix so all the shrimps were in contact with lemon juice, then sprinkled the flour and cornstarch on top and mixed again. I mixed a few more times while it sat for 15 minutes or so -- while I prepped all the rest of the ingredients. The originally recipe called for 4 egg whites and salt, not sure why, perhaps because the original recipe was for chicken, not shrimp ? I skipped both.<br />
<br />
After I had all the other ingrediants ready, I pan fried the shrimp (you can do in batches if you don't have a super large pan. Do not dump the leftover marinade into the pot !! Scoop out the shrimp and discard whatever is left in the bowl. After the shrimp are nice and pink (Don't over cook!) take them out to a clean bowl, and fry up your onions, garlic and ginger. I used 1 whole large onion chopped up (kids said I could have cut them smaller, but I was in a hurry), an entire head of garlic crushed, and maybe 2 TBSP of shredded garlic. Just cook until softened, and then add in some spices. The original recipe called for Chili powder, I'm not a big fan. I use roasted <a href="http://amzn.to/2sNxLaF">red chili paste</a> and <a href="http://amzn.to/2rPq9ap">sweet chili sauce</a> My local grocery store carries both. Amazon has good prices, but only if you purchase 4-6 bottles at a time. If you check them out though, check out the Spicy Thai Mango sauce .... my grocery store doesn't carry that one, but I love, love, love Mango, so I'll break down and order this one from Amazon, so stay tuned for a new recipe !!<br />

Anyway, I used maybe 2-3 TBS of the paste, and a good 1/4 cup + of the chili sauce, stirred that around until all the onions were good and coated, add a splash of vinegar, let it cook for just a minute, then added tomato sauce (I used a 20 ounce can and a 8 ounce can, because that's what I had) Then squeeze in some honey. I used maybe 1/4 cup of honey, tasted it, added a bit more chili paste, and then a bit more honey. Don't forget the salt. Once you have it where you like it, add back in the shrimp just until they get reheated - don't cook them. Serve over rice or noodles. <br />

Next time I make it I'll edit this post and add photos. The kids were starving - so no photos, and no leftovers :( Recipe is below - the red ingredients are for the marinade.<br />

Finally I decided to take the drive up to test drive. I received an e-mail early yesterday morning that it was still there. But it wasn't. Usually I would have gotten pissed off that I was basically "tricked" into driving an hour away, but after the deal I got on a brand new Jeep, (it had less than 1 mile on it when I first took it for a test drive) I couldn't pass it up. This will most likely be my forever car. They are installing running boards on it, so that when I do get old, I'll still be able to get into my Jeep. The best part .... it's stick shift - and no one else in my house can drive stick ! Now to think of a name for her. <br />

Maybe because I am a Pisces I love the water so much, but I love everything about water, pools, baths, the ocean, the lakes, give me a body of water and I'm jumping in. <br />

My kids all swim too. At one time or another, they've all competed on a swim team. Two of them still practice year round, 5-7 times a week. For 3 hours each practice. So yes, our life pretty much revolved around swimming. Until now.<br />
<br />
Adam decided out of the blue he was going out for the track and field team at his middle school. Since I threw both shot and discus in high school, I'm sure we've talked about it, but never did I think I'd have a kid follow in my footsteps. So a month ago, he went out for the team. It was right before Spring Break, so I figured I'd buy him a discus so he could practice, seeing as the other kids have already been doing this for 2 years. I showed him a few pointers, and he went from 40' right before Spring Break to 68' by the time Spring break was over. <br />

This past Tuesday was his first track meet. I can't tell you how proud I am of him, his first meet, and he won. He practices after school every day, then most days goes on to swim practice. Here is his first winning through of 88'1"<br />

It's still pretty cool here at the Jersey shore, especially for May. Right now Alexa tells me it's only 57*, with a high of 61* and a low of 48*. Great weather to work outside, but not warm enough for things to really grow.<br />

I do have some things going - my planter that I got from Sam's --- love this, makes having lettuce and herbs right outside my door both accessible and attractive. <br />

As I pull the lettuce or kale out, I can simply replace with smaller plants or seeds. I keep it really close to the house, so although it does get morning sun, it's in shade for the hottest parts of the day, and that helped all the herbs not to bolt last year. The only downside is that it doesn't hold much water, so watering every 3rd day or so is necessary.</div>

They are quickly growing right up the flower trellises I purchases. I bought good metal ones that I can use over and over. I think I need a new bright welcome mat though ! You can also see my little lemon tree up on a stool and there are a few extra tomato plants in containers that didn't fit in the garden.</div>

By the time Sham gets home from Columbia, the lettuce will be ready to be picked. The pepper plants behind them look sad ... so cool out, they'll grow when it gets warmer. There are 2 more rows of lettuce that should sprout soon, succession planting keeps us in fresh lettuce for about a month. My garlic is doing wonderful. I planted a lot of that this year - I'll take more photos later... but if you've never tried fresh garlic - I highly recommend it, you'll hate going back to grocery store garlic after using fresh !</div>

He usually travels alone, since the kids are still in school and not old enough to be left alone for 6 weeks at a shot !<br />

Anyway, for the past 4 weeks he's been in Columbia, exactly 2,222 miles away from me (I can still track his iPhone... how cool is that!) He has another 2 weeks before he travels home. I have to say that I am ready for him to be home. We are self employed, so that means when he travels, I get to do my job, his job, and be mom and dad to the kids.<br />

He spent the first few weeks in Bogota with friends, and now is traveling through Bucaramanga. He went to Columbia last November for 6 weeks, so he knows his way around the country pretty well. While it might be somewhere I'd consider retiring to, he knows if it's not really close (like walking distance close) to the water, I'm not moving ! </div>

Peggy has had some shit thrown at her for sure, but she still is smiling every single time I see her. She often comes with Gige when they come take one of my kids out for their birthday. She does that, no matter how tired she is, so that Gige never has to drive alone. Peggy's husband committed suicide - that would be hard enough to live through, but then her son, Scott, also committed suicide. I can't imagine. He was only 30 years old. His entire life ahead of him. There is so much to learn about mental health and so much more we could do to prevent the pain of loosing a loved one ..... I personally know the pain of depression, and the angst that depression can cause on loved ones. </span><br />

Peggy still had them all in a tote. They dropped off the tote during one of their birthday visits. It was hard for me to go through them, and I didn't even know him. But I do know Peggy - and her favorite color is purple. She LOVES purple. Funny thing is that Gige hates purple. Peggy also celebrates her Irishness. With her flaming red hair, who wouldn't ? So I tried to incorporate both traits in her quilt top</span>. </span><br />

I had no pattern for this quilt - I pieced it together as I went. I didn't even know what size it was until I went to put on that last border - it ended up being 100" by 102" Big enough for a king size quilt. These were pretty good. I'm not a big fan of cabbage, but I ate 2 of these. I don't know if I would have went through the trouble if I had to make rice as well - but seeing as we had leftover rice from the night before - it wasn't too much work - and clean up will be a breeze. There is plenty of sauce on the side too - so I served it with the rest of the leftover rice - easy and healthy meal<br />

When you get down to the center of the cabbage and the leaves are too small for rolls, cover the pan and cook the cabbage until crisp-tender. When done, remove the cabbage from the heat, coarsely chop it and set it aside.</li>

Fold the 2 sides in and roll away from you, making sure filling stays in the center and away from the top edge, until you reach the top of the leaf. You can secure the roll with a toothpick if you like-I don't find it necessary. They stay together quite well once rolled, and if they do start to unroll, they can be easily tucked back together.</li>

After adding the last bit of sauce, take a plastic spatula and gently go around the outer edge of the rolls to allow some of the sauce to drip down around the rolls. Make sure not to overfill the pressure cooker. It's easy enough to cook these in 2 batches, if necessary.</li>

The day we picked to get married was also the same day that God decided it would be funny to drop over 3 feet of snow as a wedding present to a guy who had never before seen snow before.... who said God didn't have a sense of humor. Anyway - as a surprise for our anniversary dinner this year, I had planned to make Egyptian rabbit, rice and molikia for my husband. God again decided to throw a little snow into my plans (only 6" this time) so dinner was postponed until last night - but after all was said and done -- dinner was amazing, the kids and Sham both said it tasted just like his mom used to make ... which made me happy ! I used 2 Instant Pot to make dinner quickly ... and it was extremely easy. </div>

For the Rabbit - I took 2 frozen rabbits, threw them in the pressure cooker with some water, onions and 3 bay leaves. Pressure cooked for 20 minutes (next time I'll only do 15, but they were still good) Took them out, strained the broth, used 4 cups of broth and 4 cups on rice in another pressure cooker (One that I save for just yogurt and rice and other non-spicy foods). Hit the rice button and then used the rest of the broth to make the molikia. Just brought the broth to a boil on the stove top, added 2 packages of frozen molikia and allowed it to thaw/cook until it was all bubbling. Browned the rabbit a bit on the saute function in Instant Pot # 1 and dinner was ready. So quick, so easy, so good, I'll certainly be making this more often !</div>

I let mine release NP for about 5 minutes, then couldn't wait any longer so I did the fast release, and wow, did the steam coming off smell good. I took out the chicken once I got the lid off (I had washed the bowl I had used earlier so just used that) and then put the IP on Saute' with just the sauce in it and boiled it down until it got thick (I added a little cornstarch mixed with a tad bit more coconut milk to make it go faster) I also used my potato masher to squish the larger chunks of pineapple while it was boiling down. </span></span></div>

We just got back from a very relaxing week in Safety Harbor, Florida. My husband loves to travel so I am used to wheeling and dealing and getting great deals.<br />
<br />
Airfare --- since it was a last minute flight, I didn't have time to shop around and get super deals - I ended up flying Spirit, basic airfare was $700, but after bags and seats and government taxes, I ended up paying $1,056 not great for 4 people.<br />
<br />
Car - I've found time and time again that Costco Travel has the best rates for rental cars. For the week, I spent $370 for a standard size sport utility. <br />
<br />
Hotel - I found an all inclusive deal in Tampa, Florida -- more on that later. But for the first night we stayed at a Fairfield, Marriott I've used before - nothing special - especially since our flight took off 2 1/2 hours late and we didn't get into Tampa International until 11ish. We just needed a place to sleep that first night, so $90.<br />

Now - The Hotel -- We stayed at Safety Harbor Resort and Spa -- I found it when I was searching for an all-inclusive in Florida. I called first think Friday morning, and my room was already ready. That was nice. I booked a package that included the room, breakfast and dinner, as well as drinks for both the kids (water, juice and soda) and adults (free "drink of the day" plus more) I thought with included meals I'd save some $$$. Maybe, but I don't know if it was worth it. First night - they had a pasta bar so instead of ordering off the all-inclusive menu, we went for the pasta bar - cost me a couple extra dollars per person, but worth it - fresh shrimp and pasta - yum. The next morning there was an egg station set up, so breakfast was good, as it was Sunday, but every day after that was kinda borning and the same. Dinners .... after that first pasta night ... yuck. We tried the shrimp and rissiotto -- 5 nice size shrimp, and about a pound of heavy, sticky rissiotto. No one ate it. Nadia had salmon and cous cous ... better, the asparagus was still crisp, but the cous cous ... tasted leftover not fresh. That was the last time we tried dinner there. So my recommendation - don't do the food package. They do have great spa services, so a package with included spa treatments would be my next choice. The rate for the room with breakfast, dinner and drinks plus unlimited use of the spa pools and hot tubs, steam room, sauna, ect was $251 per night, but the added "fees" like Occupany Tax of $9 per night, and 4 different state taxes combined $18 night, plus $16 night hotel service fee, and then another $2 tax on that --- brings the total per night to nearly $300 per night. Total bill was nearly $1500 for 5 nights for 4 people. If we had eaten every meal there it would have been a decent deal ... I did find out that you could apply the coupons toward menu items - we may do that next time. But the part that was worth it ..... the spas and pools. Amazing. Had my first ever facial. Relaxing. Went to differernt water classes (free and included in package) and outdoor pool, the only places under 16yos were welcome, an outdoor lap pool, and indoor spa pool and 2 hot tubs, in the ladies locker room - a sauna, steam room and plunge pool (men had the same but no plunge pool) Amazing and clean. They give you robes and flip flops upon request. Plenty of locker rooms to store your stuff. There is a bar right next to the one outside pool - plus a tiki grill. They had the best food that we enjoyed while we were there. Overall, a very enjoyable vacation, and I will visit the Resort again ---- but maybe next time without the kids. I try to put off my yearly physicals by at least a year ... making them bi-yearly ?? But, the last time I went to the dentist I was denied ... because my blood pressure was too high. Part of that was because I WAS at the dentist, but mostly because I had stopped taking my blood pressure medicine. My favorite doctor had left our practice (she had small kids, so works now in an Urgent Care twice a week) so I didn't want to go through with meeting a new doctor, so I didn't bother. <br />

Anyway, got new scripts for bloodwork, and my meds, and she thought she'd convinced me to get a mammogram (she printed it out.... doubtful I'll go) and I flatly refused a colonoscopy. But, it's a starting point. Maybe as I get healthier again, I'll consider doing the mammogram, but the colonoscopy will probably remain a no. She did say there is a new company that tests your bowel movements (you send them a sample through the mail....) Of course, I added chocolate chips, not many, and I used extra grated squash, so that I had enough to fill one 8" pan and one 9" pan. It was really good and really moist and tasted like a banana cake, you wouldn't have known there was squash in there. I will be making this again, and often if the squash keep coming like they have been ! The icing is plenty to ice two layers -- even had enough to do the sides had I wanted to stack this into a double layer cake. </div>

Nadia injured her knee in gym class back in April. It was a pretty severe injury, a broken tibia, a completely torn PCL as well as other torn ligaments. They tried a couple months of Physical Therapy, but without a PCL, there was little chance of it healing enough so she could get back on the tennis courts, much less walk, so the Doctor said surgery was our only option. We weren't sure if they would use a piece of her own hamstring or a donated piece to fix her PCL, but she was in good spirits when we got there.<br />

She was a little worried about what they called nerve blockers -- more needles going directly into her nerves, one shot near her hip and the other near her knee. Since they needed her to remain calm and not move, they gave her a bit of Valium in her IV ... hysterical. Now I see why people video their kids on laughing gas in the dentist office. Anyway, after singing a few rounds of "itsy, bitsy spider" the nerve blocks were in and she was good to go. The surgery itself took about 2 1/2 hours, but since we'd already been at the hospital 5 hours, it made for a long, long day. <br />

Finished, with ice water tubing running under her bandages so no ice packs required. I rented a little fridge so that the ice water could continue to keep her knee cool. Bad news though -- no shower for a week. Guess I better stop at the drugstore and buy her some shower wipes ! <br />

And on our way home, still smiling. Of course that may have something to do with the nerve blocks and good pain relief drugs. We filled up her pain relief drugs the minute we got home. She goes back to the Doctor in a week to remove the bandages. He said she should be off the crutches within 10 days or so, and on her way to recovery. Step by Step<br />
<br />
1 yellow squash<br />
4 slices of provolone cheese, or any other cheese<br />
4 slices of deli turkey (or whatever you like)<br />
2 eggs<br />
salt<br />
panko<br />
canola oil or other veggie oil<br />
flour -- seasoned however you like, I used<br />
pepper and onion powder, no salt, there<br />
will be enough salt when you sweat the<br />
squash and also after they are cooked.<br />

1. I peeled the squash, then slices it. Figured it'd help the flour stick better. Not sure if you have to peel it ... if you make this without peeling, let me know how it turned out. Slices should be thick enough to not see through, but thin enough to cook - maybe 1/4" ?<br />
<br />
2. Salt both sides of the squash - and lay on paper towels or clean kitchen towels and let sit for about 30 minutes. This draws a lot of the water out from the squash and it'll help it not splatter so much when cooking.<br />
<br />
3. Take another clean towel and dry off the tops of the squash. Prepare 3 deep dishes/plates ... 1 with the seasoned flour, one with the 2 eggs which have been beaten with some water, maybe 1/4 cup for 2 eggs giver or take, and one with the panko.<br />
<br />
4. Heat your oil ... I used my trusty cast iron pot, you want something with sides high enough so you don't get spattered. I filled mine about 1/2" deep, but I was doing more than one squash worth. I heated mine on medium, and it was the perfect heat.<br />
<br />
5. Once your oil is heated (about 5 minutes) take two squash slices that are about the same size, and make a sandwich. On each sandwich I put 1/2 slice of cheese and 1/2 slice of turkey. I also added some shredded mexican mixed cheese because I had it in my fridge and I wanted to see if it would stay inside (it did) Cover your sandwich with the second squash slice, dredge in the seasoned flour, make sure to not only get the top and bottom, but also roll once to get all the way around the outside.<br />
After flour, dip in egg wash, both sides, and then into the panko, where I used a clean fork to cover the squash sandwich with panko and pressed in firmly. <br />

6. Carefully lower into the hot oil, it should begin to bubble but not so hot it splatters. If it starts to splatter it's too hot, if it doesn't immediately start to bubble, it's too cold. Let cook while you make a 2nd and 3rd sandwich. I had time to get the 4th sandwich in before I had to flip the first one. I thought that it would fall apart, but again, I used salad tongs to flip and they stayed together perfectly. I flipped mine a few times because I wanted an even brownness and I wanted to make sure all the cheese was melted. <br />
<br />
7. After cook, drain on a papertowel and sprinkle with a tiny bit of salt. Make sure to let cool a couple minutes - the insides will be HOT HOT HOT ! The Garden is doing amazing so far this year. The herbs I planted all did well, although now it's getting a little hot and they are going to seed. Lettuce and spinach ... also amazing. Tomatoes and cucumbers are just now coming in. The hubster is especially pleased with that long light green cucumber in the middle ... in Egypt it's called Atta, according to him it is sweeter than cucumber with larger seeds. The seed packet called them Armenian cucumbers - haven't sliced into it yet to see if he's right. The yellow squash pictured is only a small amount of what I've already picked. DH has shredded some and cooked it with eggs, but I know that'll get old quickly - so I'm trying new things. </div>

This was my first new concoction. Not sure of a name for it - <a href="http://breakthecycle4them.blogspot.com/2016/07/yellow-squash-sandwiches.html">yellow squash fried sandwiches </a>perhaps ? These are filled with cheese and turkey - and they ended up amazing. I was really worried that they would lose their filling but they didn't and when you bit into them, the cheese was stringy just like mozzarella sticks, which meant the kids actually loved them. Sick like never before. Sinuses clogged, ear infection so bad she couldn't hear out of one ear, constantly blowing her nose, and generally just feeling like crap. Even though I took her to Urgent care and got her on Meds - it didn't help much. It got so bad she blew her nose one day in the locker room and nearly passed out --- luckily for her, her teammates were right behind her to catch her and guide her to a bench so she could sit down and ride out the blackness and dizziness. She said although it hurt like hell - she could hear again. I'm hoping she blew out the infection - but I'll be taking her to the Doctors today to make sure she didn't blow out her eardrum.<br />

Anyway - it was a good life lesson --- you don't always get what you think you deserve, even though I do think she did deserve a great meet - there will be more meets down the road. <br />

Now - off to order her some more Protein Powder. We originally started with P2Life because it didn't contain anything that would ever disqualify her from a higher meet if she was ever drug tested. We switched because we weren't at that level yet, and the P2Life was a bit more expensive than other stuff. Well - that being said, we are going back to P2Life protein powder - the others are either sickly sweet, or don't disolve well .... I'd rather spend the extra money and have something she doesn't have to gulp down simply because it tastes like crap !!<br />

Update --- well, I went to P2Life... and they no longer make Vanilla. She's not a big fan of Chocolate or Strawberry --- so I was in search of something new. Problem with her that it has to be NCAA approved when she gets to college - so we might as well start that now. Settled on this - lots of different Division 1 colleges recommend this, so we'll give it a shot. Good news is it comes in many different flavors -<br />

Preheat the oven to 450°F. Stir together paprika, salt, allspice, black pepper, cardamom, cloves, coriander, cayenne, fenugreek (if using) and ginger in a small bowl; set spice mixture aside. <br style="margin: 0px;" /><br style="margin: 0px;" />Toss chickpeas with a tablespoon of the oil on a large rimmed baking sheet and spread out in a single layer. Roast chickpeas, stirring occasionally, until somewhat dried out and just golden brown, 16 to 18 minutes; set aside.<br style="margin: 0px;" /><br style="margin: 0px;" />Meanwhile, heat remaining 2 tablespoons oil in a medium pot over medium heat. Add garlic, onion and chopped ginger and cook, stirring occasionally, until very soft and golden brown, 8 to 10 minutes. Stir in reserved spice mixture and continue cooking, stirring constantly, until spices are toasted and very fragrant, about 2 minutes. Stir in tomato sauce and cook 2 minutes more.<br style="margin: 0px;" /><br style="margin: 0px;" />Stir in broth, potatoes, carrots and reserved chickpeas and bring to a boil. Reduce heat to medium-low, cover and simmer until potatoes and carrots are just tender, about 20 minutes. Uncover pot and simmer until stew is thickened and potatoes and carrots are very tender, about 25 minutes more. Ladle stew into bowls.</div>
